Buffalo and BBQ Chicken and Shrimp Skewers



These were so good!  Everyone in my family could not get enough of them!  All of our kids wanted more of the BBQ and one brave child wanted more of the Buffalo, plus anything on a skewer is more fun!!



Buffalo Chicken and Shrimp Skewers

 What you need:

12 oz Large Shrimp (I use frozen, thawed and tail removed)
1 lb Chicken Breast
2.5 Tbsp Light Mayo
2 Tbsp Frank's Hot Sauce

Directions:
-  Soak the wooden skewers in water for 20 minutes
-  Cut the chicken breast in to bite sized pieces
-  Alternate the shrimp and chicken on the skewers
-  Preheat your grill (we have a gas grill so we don't turn it on until the skewers are ready to go on)
-  Season the skewers with salt and pepper
-  Mix together the Mayo and Frank's in a small bowl
-  Cook on both sides for about 7-9 minutes
-  Brush the Mayo and Frank's mixture on each side right before pulling the skewers off

BLT Pasta Salad

This is a good dish to make and take to work for lunch all week.



BLT Pasta Salad

What you need:

3 2/23 Cups Cooked Macaroni Shells
2 Large Tomatoes, Cut in Squares
6 Slices of Turkey Bacon, Cooked and Crumbled
3 Cups of Cut Romaine Lettuce
1 tsp Sugar
2 tsp Apple Cider Vinegar
1/2 Cup Chobani Greek Yogurt
1/3 Cup Light Sour Cream
1 TBSP French's Yellow Mustard

Directions:

-  Mix together macaroni, tomatoes, bacon, and romaine lettuce in a large bowl.
-  In a separate bowl mix together the sugar, apple cider vinegar, Chobani greek yogurt, light sour cream and French's yellow mustard.
-  Stir the dressing in to the macaroni mixture and refrigerate!
